Low Carb Smashed Cauliflower Recipe
Low carb cauliflower is so good when it’s sautéed than smashed. It’s not the perfectly smooth cauliflower mash that most other mashed cauliflowers look like. Our version is a delicious chunky smashed version that cooks the cauliflower first with garlic and olive oil. The sautéed cauliflower gives an amazing flavor and it’s so good, you might have to make double the batch! It’s low carb and low sugar, which is perfect as a side dish. Best of all, it’s low calorie and much healthier than smashed potatoes. Add less cheese and replace butter for olive oil if you want it to be super healthy! This is the perfect side dish for any dinner or holiday table. It’s a great way to have a low carb Thanksgiving meal without the starch of mashed potatoes.
